Chickpea and Corn Salad

This salad is full of protein as it has the chickpeas and corn, which are both high protein foods and being raw the total nutrient value is retained.

1 packet Wright Sprouts Chickpea Sprouts
1 cob of corn
1 red or green pepper
2 stalks of celery
1 Tbsp. Olive oil
Juice of a lemon

Chop celery and peppers into small pieces, remove the corn from the cob by inserting a knife between the rows of corn and flicking the corn off, working your way around the corn cob. Alternatively slice down the cob to remove. 
(This method can be rather messy as the juice of the corn can shoot out in all directions.) This recipe uses raw corn but you can cook it if you wish.

Place all vegetables and Wright Sprouts Chickpea Sprouts into a bowl and pour over the oil and lemon juice, mix well and serve.
