Fennel Salad with Broccoli Mix Sprouts

Ingredients:

1 fennel bulb

1 red onion

1 red large chili (Optional)

1 large orange

2 cups fresh baby spinach

1/2 pkt Wright Sprouts Broccoli Mix Sprouts

Method:

Finely slice the red onion and fennel bulb, place in a bowl. Wash and chop the spinach, add to the bowl.

Slice the chili down the middle and very carefully remove all the seeds and membranes, finely slice the chili into thin strips and then cut these up into 3 millimetre lengths, add to the bowl.

Peel the orange and chop into small wedges retaining any juice and add to the rest of the salad. Finally add 1/2 packet of the broccoli sprouts and mix all the ingredients through each other and season to taste. Leave this salad for at least 10 minutes before serving as the flavors develop with time.

This is great as a side dish to fish or chicken, it has a freshness that lifts the palate.
