Wright Sprouts

Kale with Nuts and Feta

Ingredients:

large bunch washed and shredded Kale

1/2 carrot Julienned or grated

1 small beetroot Julienned or grated

2 spring onions finely sliced

1 green capsicum finely chopped

150 gm Feta cubed

1/4 cup pistachio nuts

1/4 cup Raw Energy Schmogle (Dried Pumpkin & Sunflower Sprouts)

Dressing:

 3 Tbsp olive oil

Juice of lemon

 

Method:

Combine all the salad ingredients into a bowl and toss to combine.

Mix the dressing in a separate container, then pour over salad and toss again.

This is ready to serve.

 

NB: The pistachio and schmogle really make this a super dish, so don't leave these out.
