Kiwifruit Salsa

3 large green kiwifruit

1 Kaffir Lime leaf

Kaffir zest

1 Tbsp kaffir lime juice

1 long red chilli

2 Tbsp chopped coriander 

3-4 mint leaves chopped

1/4 cup Wrights Sprouts alfalfa/radish sprout mix


Peel and dice the kiwifruit, finely julienne the kaffir lime leaf, deseed the chilli and chop finely, roughly chop the herbs then combine all these in a bowl with other ingredients.

This is best made fresh and goes with anything. It is a little different to other salsa's but is great on crackers as well as a side dish with fish or seafood.
