Wright Sprouts

Marinated Mushrooms & Blue Pea Sprouts

6-8 button mushrooms
A small handful of fresh mint
1 bag of Wright Sprouts Blue Pea sprouts
2 Tbsp Balsamic Vinegar
1 Tbsp Flaxseed oil or Olive oil. 


Slice mushrooms thinly, place in a bowl and marinate in Balsamic vinegar for 1 hour.

Chop mint roughly, mix with marinated mushrooms and blue pea sprouts in a bowl, pour over the oil and mix well.

Serve either chilled or gently warm in the oven for 20 minutes on 50 degrees celsius.

Variation: Add a pakt of Whero Peas and some chopped fetta cheese.
