2 avocado, peeled and stones removed
Juice of 2 limes
60ml Water
100ml Telegraph Hill Extra Virgin Olive Oil
1 medium chilli, deseeded and finely diced
1 bunch coriander, finely chopped
2 spring onions, finely chopped
Salt and pepper to taste
Place the flesh of one avocado in a food processer, add the lime juice, water, olive oil, and chilli and blend until smooth.
Finely chop the remaining avocado and stir into the smooth avocado mixture. Add coriander, spring onions and season with salt and pepper to taste.
2 apples, diced to 1cm
2 packets of Wright Sprouts Adzuki, Lentil & Baby Mung mixed bag
2 sticks celery, diced
Mix avocado puree with apples, sprouts and celery together. Serve with mesclun salad and some potato crisps or corn chips.
